2 eggs, beaten 1 c. sugar 1 c. chopped dates 1 c. sweetened flaked coconut 1 c. chopped walnuts 1 t. vanilla extract 1/4 t. almond extract Garnish: powdered sugar
In a large bowl, mix eggs and sugar until light and fluffy. Stir in remaining ingredients except garnish. Transfer mixture to a 2-quart casserole dish coated with non-stick vegetable spray. bake at 350 degrees for 30 minutes. remove from oven; stir well with a wooden spoon. Cool; roll into 3/4 inch balls. Roll balls in powdered sugar. Makes 3 dozen.
