Apple Butter Cinnamon Rolls

3/4 c. warm water, 110 to 115 degrees 2 envs. active dry yeast 1/2 c. sugar 1 t. salt 2 eggs, beaten 1/2 c. shortening 1/2 c. butter 4 c. all-purpose flour 1 T. cinnamon 3/4 c. apple butter 1/2 c. brown sugar, packed Garnish: additional cinnamon, 16-oz. container cream cheese icing
In a large bowl, combine all ingredients except apple butter, brown sugar and garnish; mix until well blended. Knead for 10 minutes, or until dough is well formed. (If using a bread maker, set to dough setting; combine ingredients as above and process according to manufacturer’s directions. Continue as directed.) Place dough in a greased large bowl. Cover and let rise until double, 45 to 60 minutes; punch down. Remove dough to a floured surface. With a rolling pin, roll dough into a rectangle, about 1/4-inch thick. Spread apple butter evenly over dough; crumble brown sugar over it. Sprinkle generously with cinnamon to taste. Starting on one long edge, roll up dough jelly-roll style. Slice into 8 rounds; arrange in a well-greased 11"x7" baking pan. Bake at 350 degrees for 15 to 20 minutes, until golden. While still hot, spread with frosting. Makes 8 rolls.
