| Lemon Delight |

2 eggs, separated
2 T. butter
3/4 c. sugar
2 T. all-purpose flour |
1/4 c. lemon juice
1 c. milk
Optional: frozen whipped topping, thawed |
| Beat egg yolks in a small bowl; set aside. In a separate bowl, beat egg whites until stiff peaks form; set aside. In a medium-size mixing bowl, cream butter and sugar together; add flour and continue to cream mixture. Beat in egg yolks, lemon juice and milk; fold in egg whites. Pour mixture into an ungreased 12"x8" baking pan or individual custard cups. Bake at 360 degrees for 35 minutes. Top with whipped topping, if desired. Serves 4 to 6. |
