20 large cherry tomatoes 4 slices bacon, crisply cooked and crumbled 1⁄2 c. light mayonnaise 1⁄3 c. green onion, chopped 3 T. grated Parmesan cheese Optional: 2 T. fresh parsley, finely chopped
Cut a thin slice off the top of each tomato; scoop out and discard pulp. Invert tomatoes onto a paper towel to drain. Combine the remaining ingredients in a small bowl; mix well. Spoon mixture into each tomato; refrigerate for several hours before serving. Makes 10 servings.
