2 c. sugar 1 c. butter, softened 1 t. vanilla extract 1 t. salt 15-oz. container ricotta cheese 4 c. all-purpose flour 1 t. baking soda
Sweet Vanilla Icing: 2/3 c. plus 1 T. sweetened condensed milk 1/2 c. butter, softened 1 t. vanilla extract 2 c. powdered sugar Optional: red food coloring
Use an electric mixer on medium speed to blend sugar, butter, vanilla, salt and ricotta cheese. Gradually stir in flour; mix in baking soda. Drop by teaspoonfuls onto ungreased baking sheets. Bake at 350 degrees for 10 to 13 minutes. Cool on wire racks. To prepare Sweet Vanilla Icing: mix all icing ingredients with an electric mixer on low speed. Spread Sweet Vanilla Icing over cookies. Makes about 4 dozen.
