1 T. butter 1 c. portabella mushrooms, sliced 2 cloves garlic, minced 12-inch whole-grain Italian pizza crust 1 T. olive oil 1 c. fresh spinach, sliced into 1⁄2-inch strips 1⁄2 c. fresh basil, chopped 8-oz. pkg. shredded mozzarella cheese
Melt butter in a large skillet over medium heat. Add mushrooms and garlic; sauté just until tender, about 5 minutes. Place crust on an ungreased baking sheet; brush with oil. Sprinkle spinach evenly over crust, followed by basil, mushroom mixture and cheese. Bake at 350 degrees for 8 to 10 minutes, or until cheese is melted and edges of crust are crisp. Makes 6 servings.
