How happy are you when you turn the page to May on your calendars? We're downright giddy! Sunshine and blue-sky days ahead, flowers blooming wherever they're planted and a celebration of Mom are all coming up! These are the days when our schedules seem to fill up too...kids' ballgames, flea-market shopping, backyard cookouts. There's so much to look forward to, isn't there?

With Mothers' Day coming up this Sunday, we thought it was a perfect time to show off one of our newest cookbooks, Mom's Very Best Recipes. Scroll down for special sneak peeks, including a tried & true recipe from inside. It's a collection of all those handed-down recipes from Mom (and Grandma!) and to celebrate, we thought we'd ask you to get in on the fun too! Details below.

 Our Newest Cookbook
Chances are, your very first adventure in the kitchen included Mom. Whether she let you borrow an apron, gave you the wooden spoon to help mix up the cookies or was your first taste-tester, Mom gave many of us our introduction to the kitchen...along with some great recipes too!

My family was full of amazing cooks and big farmhouse suppers were always something I looked forward to. In this photo, I'm sitting next to my mom and we're at the table with Aunt Nora, my mom's oldest sister. With 12 years between them, she was always like a mom to her. Aunt Nora - 98 in this photo and she lived to be 104! - always put out a spread when we came. That's us at the table AFTER dinner and you can see how much food we still had left! Dessert always included my favorite soft sugar cookies. Aunt Nora's recipe is one she passed to my mom and I've made them with my kids...so delicious!

Even though we had a big family, my mom always made special effort at dinnertime. Ahead of her time, she was making gourmet dishes for us kids way before they were in fashion. One of her best recipes was Quiche Lorraine and like many other dishes, she was making it before it was in. She definitely inspired me to make dinnertime special for my family, even if I was just making mac & cheese for the kids. This photo shows her fun side...we were celebrating her birthday (and my daughter Sydney's) at a local Mexican restaurant.

Inside Mom's Very Best Recipes
Here's a sample recipe from Mom's Very Best Recipes...enjoy it with your family!

Almond Chicken

This delicious take on chicken was shared with us by Brooke Sottosanti of Brunswick, Ohio. She writes, "This was one of my favorite dinners that Mom made for us when we were growing up. To this day, my brother still asks me to make this for him when he comes to visit!"

1/3 c. soy sauce
1 t. garlic powder
3 lbs. boneless, skinless
     chicken breasts, cut into
     bite-size pieces
1/2 c. whole-wheat flour
1/2 c. almonds, finely
     chopped
1/2 t. salt
1/2 t. pepper
2 T. corn oil
cooked rice or lo mein
     noodles



Combine soy sauce and garlic powder in a large bowl; add chicken. Let stand for about 20 minutes; drain. In a separate bowl, combine flour, almonds, salt and pepper. Add chicken to flour mixture; toss to coat lightly. Heat oil in a wok or large skillet over medium-high heat. When oil is hot, add chicken mixture and reduce heat to medium. Cover and cook, stirring often, for about 20 minutes, until chicken juices run clear. Serve over cooked rice or noodles. Makes 8 servings.
