Those lazy, hazy days of summer are here...where everything and everyone seems to slow down just a bit. We find ourselves trying new recipes, reading more books and taking a little time to write cards and letters to far away friends.  Recipes for Garden-Fresh Veggies
Shared with us by Janet Shelly of Bourbonnais, Illinois, this bread is a great way to use some of that plentiful zucchini from your garden! For variety, Janet sometimes uses orange extract instead of vanilla.

Chocolate-Zucchini Bread
from Mom's Favorite Recipes cookbook

3 eggs, beaten
1 c. oil
2 c. sugar
2 T. vanilla extract
2-1/2 c. all-purpose flour
1 t. salt
1-1/2 t. baking soda
2-1/2 t. baking powder
1/2 c. baking cocoa
2 c. zucchini, shredded
1 c. chopped nuts


Blend eggs, oil and sugar together in a large mixing bowl; add vanilla, flour, salt, baking soda, baking powder and cocoa, mixing well. Fold in zucchini and nuts; spoon into 2 greased 9"x5" loaf pans. Bake at 350 degrees for one hour. Makes 16 servings.

If you've got a bumper crop of corn this summer, this recipe is a tasty way to enjoy it! Shared with us by Kay Marone of Des Moines, Iowa who says this recipe is a local favorite.

Iowa's Best Corn Soup
from Farmers' Market Favorites cookbook

1 t. olive oil
1/2 c. onion, diced
1 clove garlic, minced
1/2 t. ground cumin
4 c. fresh corn kernels
2 new potatoes, diced
1/2 t. kosher salt
1/8 t. pepper
4 c. vegetable broth
3/4 c. milk
1 t. fresh cilantro, chopped


Heat oil in a stockpot over medium heat. Sauté onion, garlic and cumin for 5 minutes, or until onion is tender. Add remaining ingredients except milk and cilantro; bring to a boil. Reduce to a simmer and cook for 20 minutes, or until potatoes are tender. Add milk and cilantro; cook and stir to heat through. Makes 8 servings.

Festival in Nappanee, Indiana!

When: Thursday, August 5, 2010 at 9:00 am through
Sunday, August 8, 2010 at 5:00 pm

Show hours: 9 am to 7 pm Thursday
through Saturday,
and 10 am to 5 pm on Sunday


Book signings are scheduled for
Thursday from 2 to 4 pm and
Friday 10 am to 12 pm




Wear your comfiest clothes, because this festival is held on the grounds of Amish Acres, an 80-acre historic farm restoration. You'll find nearly 300 artists and crafters, folk singers, square dancers, strolling musicians and more!



Love country-style fair food? You'll find mouthwatering treats including pork barbecue, sweet corn, fried vegetables, strawberry shortcake, onion rings, fresh-baked bread and iced sassafras tea. There's also a family-style restaurant, meat & cheese shop, an antique soda fountain, fudge shop, lunch grill and bakery too!
