August is here and with it, the dog-days of summer...how are YOU keeping cool these days? Here in Ohio it's been a fun-filled but HOT summer. Nevertheless, we've been spending those early cool hours in our gardens - tomatoes and zucchinis are taking over! - and enjoying lots of time with family & friends after the sun is past its peak. The fireflies have been pretty amazing this year, haven't they? It's a twinkling light show every night!

As much as we're enjoying these sunshine-filled days, we can't help but look a little further ahead on the horizon. Fall will be here before we know it and if you know us, you know how much we LOVE this cool & crisp season. Now seems like just the right time to introduce our brand new cookbook,

the orchard this fall, this recipe is from Quick & Easy Autumn.
All of the recipes in this brand new cookbook are either ready in under 30 minutes or call for 8 or fewer ingredients, like this one!
Upside-Down Apple Coffee Cake
This recipe comes from frequent contributor Amy Hunt of Traphill, North Carolina. We love that it dresses up refrigerated cinnamon rolls for a quick but impressive dish. She writes, "This recipe was shared with me by a childhood friend who's still a very special part of my life. It's delicious and so easy to make."

1-1/2 c. apples, peeled,                        1/2 c. pecan pieces
      cored, chopped and                       2 T. butter, melted
      divided                                             1/3 c. brown sugar, packed
12.4-oz. tube refrigerated                   2 T. corn syrup
      cinnamon rolls,
      separated

Spread one cup of apples in a 9" glass pie plate sprayed with non-stick vegetable spray. Cut cinnamon rolls into quarters, setting aside icing from tube. Place rolls in a large bowl; add remaining apples and pecans. In a small bowl, combine remaining ingredients; mix well and pour over rolls. Toss gently to combine. Spoon mixture over apples in pan. Bake, uncovered, at 350 degrees for 25 to 35 minutes, until rolls are deep golden. Cool for 5 minutes; invert onto a serving platter. Remove lid from icing and microwave for 10 to 15 seconds. Drizzle icing over warm coffee cake. Makes 8 servings.
