January's here and with it comes all the possibility and promise of a brand new year...what are your hopes and dreams for 2012? Here at Gooseberry Patch we're looking forward to sharing our newest collection of cookbooks with you, starting right here in this edition of Feather Your Nest!

Frosty winter days bring us back inside and, with the hustle & bustle of the holidays behind us, we're looking forward to quieter days. We love watching the snow fall outside while we're toasty warm next to a crackling fire...there's no better time to curl up with a brand new cookbook, is there? Keep reading to get a peek at Rush-Hour Recipes, our first new title of the year...we just know you're gonna love it!

We're also sharing a brand new feature on our blog every Monday, all year long...starting this week! We hope that our Menu of the Week helps you stay inspired in the kitchen...maybe it'll even introduce some of our cookbooks that you haven't seen before!

Menu of the Week
When you're planning your family's weekly menu, where do you go for inspiration? Maybe you turn to a favorite cookbook or maybe you've jotted down a list of favorites from which to choose. No matter how we select what goes on the dinner table, everyone can use a new tool to make it even easier, right?

That's what we thought and so, we're excited to bring you our
Menu of the Week!


Starting this week, we'll put together a sampling of recipes from some of our best-loved cookbooks and we'll share them every Monday on the Gooseberry Patch blog. Whether you try one or two throughout the week or get really creative and fix ‘em all, we hope you enjoy this new feature.

Here's a recipe from the One-Dish Dinners chapter...we love it because it uses ingredients
we almost always have on hand and it's so easy to customize to suit your family's tastes!
Deb's Chicken Florentine

Deb Eaton of Mesa, Arizona shared her recipe and this story with us. She writes, "My husband loves Italian food! When a local restaurant closed, he was sad that he couldn't get his favorite dish anymore, so I recreated it for him at home. You can substitute frozen spinach, canned mushrooms or leftover rotisserie chicken. Serve with garlic bread sticks hot from the oven to sop up all the delicious juices!"

16-oz. pkg. linguine pasta,
     uncooked
2 T. olive oil
3 cloves garlic, minced
4 boneless, skinless chicken
     breasts, thinly sliced
1-1/4 c. fat-free zesty Italian
     salad dressing, divided
8 sun-dried tomatoes, chopped
8-oz. pkg. sliced mushrooms
5-oz. pkg. baby spinach
cracked pepper to taste
Optional: grated Parmesan cheese,
     chopped fresh flat-leaf parsley
Cook pasta according to package directions; drain. While pasta is cooking, warm oil in a skillet over medium heat. Add garlic and cook 2 minutes. Add chicken; cook until no longer pink. Drizzle chicken with one cup salad dressing. Stir in tomatoes and mushrooms; cover skillet and simmer until mushrooms are softened. Add spinach; cover skillet again. Cook another 2 to 3 minutes, just until spinach is wilted; stir and sprinkle with pepper. Toss cooked linguine with remaining salad dressing. Serve chicken and vegetables over linguine, garnished as desired. Makes 6 servings.
