1-1/4 lbs. asparagus spears, ends trimmed 1 med. garlic clove, minced 1-1/2 t. fresh ginger, grated 1-1/2 t. rice wine vinegar 1-1/2 t. soy sauce 1 T. sesame oil salt and pepper to taste 1 T. peanut butter 1 T. cilantro leaves, minced 1 T. water Garnish: 1 med. scallion, minced
Steam asparagus until slightly tender, not entirely cooked. Combine garlic, ginger, rice wine vinegar, soy sauce and sesame oil, along with salt and pepper in a bowl. Brush asparagus with approximately one tablespoon of dressing. Broil for approximately 3 to 4 minutes or until asparagus is tender. Whisk together peanut butter, cilantro and water into remaining dressing; toss with asparagus. Transfer to a serving platter, sprinkle with scallion.
