1 head cauliflower, cut into flowerets
3 eggs, beaten
1 sleeve round buttery crackers, crushed
oil for deep frying

Dip cauliflower into beaten eggs; coat with cracker crumbs. Deep fry until golden in a heavy skillet with 1/2 inch oil. Place on paper towels to drain. Makes 6 to 8 servings
