8 to 9 slices cinnamon-raisin bread, cubed 3 eggs, beaten 2 c. milk 1/2 c. sugar 21-oz. can apple pie filling Optional: whipped cream or ice cream
Spread bread cubes in a single layer on an ungreased baking sheet. Bake at 300 degrees for 10 to 15 minutes until dry, stirring twice. Cool. In a large bowl, whisk eggs, milk and sugar. Gently stir in pie filling and bread cubes. Pour into a slow cooker that has been sprayed with non-stick vegetable spray. Cover and cook on low setting for 3 hours, or until puffy and a knife inserted near the center comes out clean. Uncover and let stand for 30 to 45 minutes; pudding will fall as it cools. Spoon into dessert dishes; garnish as desired. Serves 6.
