6 slices bacon 4 c. potatoes, peeled, cooked and cubed 1/2 c. green pepper, chopped 2 t. onion, chopped salt and pepper to taste 6 eggs 1 c. shredded Cheddar cheese
Cook bacon in skillet over medium heat until crisp. Remove bacon to paper towel; pour off part of drippings. Add potatoes, green pepper and onion to drippings in skillet; cook until lightly golden. Season with salt and pepper. Break eggs over potato mixture, cover and cook eggs to desired doneness. Sprinkle with cheese and crumbled bacon. Cover and let stand until cheese melts about 5 minutes. Serves 6.
