1 lb. ground beef 1 onion, chopped 1 green pepper, chopped 14-1/2 oz. can tomatoes 2 t. chili powder 1 t. salt 7-oz. pkg. cornbread mix 15-1/4 oz. can corn 1/3 c. milk 2 c. shredded Cheddar cheese
Brown beef with onion and green pepper; drain. Add tomatoes, chili powder and salt. Simmer for 10 minutes; pour into a 2-quart casserole dish. In bowl, stir together the cornbread mix, corn and milk, just until moist. Spoon over the meat mixture and sprinkle with cheese. Bake uncovered in a 400 degree oven for 30 minutes. Makes 4 servings.
