1 lb. lean ground beef 1 lb. bratwurst, removed from casings and broken up 1 c. soft bread crumbs 2 cloves garlic, pressed 1-oz. pkg. onion soup mix 8-oz. can tomato sauce 1 egg, beaten 2 T. fresh flat-leaf parsley, chopped 2 T. mustard 1 T. cider vinegar celery salt and pepper to taste Garnish: additional mustard 5 slices bacon 1 T. brown sugar, packed
In a large bowl, mix together all ingredients except garnish, bacon and brown sugar. Press into a 9"x5" loaf pan sprayed with non-stick vegetable spray. Spread additional mustard over meatloaf. Arrange bacon slices over top; trim bacon or tuck in the edges on the sides. Press brown sugar onto bacon. Cover and bake at 350 degrees for one hour. Drain off any excess fat; let meatloaf rest 5 minutes before slicing. Makes 8 servings.
