1 c. butter, softened 1 c. powdered low-calorie sugar blend for baking 2 eggs 2 t. vanilla extract 4 c. all-purpose flour 1 t. baking powder 1/2 t. salt Optional: colored sugar
With an electric mixer on medium speed, beat butter until creamy. Gradually add sugar blend, beating well. Add eggs, one at a time, mixing well. Stir in vanilla. In a separate bowl, combine flour, baking powder and salt. Gradually add to butter mixture. Divide dough in half; pat each half into a circle and wrap with plastic wrap. Chill for one hour, until somewhat firm. Roll out 1/8-inch thick on a lightly floured surface, one-half of dough at a time. Cut out with cookie cutters; place on lightly greased baking sheets. Sprinkle
lightly with colored sugar, if desired. Bake at 325 degrees for 8 to 10 minutes, until lightly golden around edges. Cool slightly on baking sheets; remove to wire racks to cool completely. Makes 2-1/2 dozen.
