1-1/2 c. pecans, finely chopped 1-1/2 c. chocolate wafer cookies, crushed 1/3 c. butter, melted 2 c. semi-sweet chocolate chips, melted and divided 2-8 oz. pkgs. cream cheese, softened 1 c. brown sugar, packed 4 eggs 1 c. sour cream 1/3 c. cold coffee 2 t. vanilla extract 2/3 c. whipping cream 1/4 c. sugar 1/2 c. semi-sweet chocolate chips
Mix pecans, cookies and butter together; press into the bottom and up the sides of a greased 9” spring form pan. Drizzle with1/2 cup melted chocolate; chill until chocolate is firm. Meanwhile, combine remaining melted chips, cream cheese, brown sugar, eggs, sour cream, coffee and vanilla in a bowl. Pour mixture into crust; bake at 300 degrees for one hour and 10 minutes. Cool completely. Cover and chill 8 hours. Before serving, heat whipping cream and sugar in a saucepan over low heat, whisking constantly. Add chocolate chips, whisking until smooth; spread over cake. Remove sides of pan. Makes 12 servings.
