1 lb. ground pork sausage 1-1/4 c. pork-flavored stuffing mix 1/2 c. low-sodium chicken broth 1/2 c. Honeycrisp apple, peeled, cored and diced 1/2 c. onion, diced 1 egg, beaten 1-1/2 t. mustard 1/2 c. shredded sharp Cheddar cheese Optional: barbecue sauce
Combine all ingredients except barbecue sauce in a large bowl. Mix well; form into balls by tablespoonfuls. Place meatballs on a lightly greased 15"x10" jelly-roll pan. Bake at 350 degrees for 18 to 20 minutes, until meatballs are no longer pink in the middle. Brush with barbecue sauce, if desired. Serves 8 to 10.
