1/4 c. butter, melted 2 T. Cajun seasoning 4 boneless, skinless chicken breasts 4 slices Pepper Jack cheese 4 sandwich buns, split 8 slices bacon, crisply cooked Optional: lettuce, mayonnaise, sliced tomato
Melt butter in a large skillet over medium heat; stir in Cajun seasoning. Add chicken; cook until juices run clear when pierced with fork. Top chicken with cheese; allow to melt. Serve on buns topped with bacon and, if desired, lettuce, mayonnaise and tomato slices. Serves 4.
