1-1/2 c. all-purpose flour 2-1/4 t. baking powder 3/4 t. salt 2 egg yolks 3/4 c. milk 1-1/2 T. oil 1 egg white 20 clams, cleaned
Sift flour, baking powder and salt together; set aside. In a medium bowl, beat egg yolks, milk and oil. Gradually add flour mixture, beating until smooth. Beat egg whtie until soft peaks form; fold into batter. Add enough oil to a deep fryer of heavy skillet ot equal 2 to 3 inches. Dip clams into batter and deep fry a few at a time for 3 to 4 minutes. Clams will be golden in color and float to the surface when done. Drain on paper towels. Repeat with remaining clams.
