2 c. water 2 c. potatoes, diced 1/2 c. carrots, diced 1/2 c. celery, diced 1/4 c. onion, diced 1 t. salt 1/4 t. pepper 1/4 c. butter 1/4 c. all-purpose flour 2 c. milk 2 c. shredded Cheddar cheese 1 c. cooked ham, diced
Combine the first 7 ingredients in a large stockpot; bring to a boil. Boil until vegetables are tender, about 10 to 12 minutes. In the meantime, melt butter in a skillet; stir in flour until smooth. Gradually add milk, stirring until thickened; mix in cheese, stirring until melted. Pour into undrained vegetable mixture; add ham. Heat until warmed through, stirring constantly; do not boil. Serves 4.
