6 boneless, skinless chicken breasts 1/4 c. oil 2 T. dried thyme 2 T. butter 1/4 c. sweet onion, diced 14-oz. pkg. frozen chopped spinach, thawed and drained 1/2 c. cottage cheese 1/4 c. grated Parmesan cheese 1/2 t. dried basil
Brush chicken with oil; sprinkle with thyme and set aside. Melt butter in a saucepan and sauté onion until tender. Combine onion mixture and remaining ingredients in a bowl. Add a tablespoon of mixture to center of each chicken breast and bring sides to center, overlapping slightly. Secure with metal skewers; place in a greased 13"x9" baking pan. Bake, uncovered, at 375 degrees for 30 minutes, until chicken juices run clear. Remove skewers before serving. Serves 6
