3 eggs
2 c. sugar
1-1/4 c. oil
1 t. salt
1/2 t. cinnamon
2 t. vanilla extract
3 c. all-purpose flour
1-1/2 t. baking soda
3 c. apples, finely chopped
1 c. chopped walnuts

Beat eggs with sugar; add oil, salt, cinnamon and vanilla. Stir in flour, baking soda, apples and nuts; dough will be very thick. Place in 2, greased 9"x5" loaf pans and bake at 325 degrees for one hour or until center tests done. Makes about 12 to 16 servings.
