2 oranges, divided 5 c. zucchini, peeled and ends trimmed 5 c. sugar T. lemon juice 6-oz. can frozen orange juice concentrate, thawed 6-oz. pkg. orange gelatin mix 5 to 6 1-pint canning jars and lids, sterilized
Coarsely cut up one orange with peel still on; grind in a food mill and transfer to a bowl. Peel remaining orange, discarding peel. Grind orange sections; add to bowl and set aside. Grind zucchini; combine zucchini and sugar in a large saucepan. Add ground oranges, lemon juice and orange juice. Bring to a low boil over medium heat. Simmer for 12 minutes, stirring often. Add gelatin; cook and stir until gelatin is dissolved. Ladle hot mixture into hot sterilized jars, leaving 1/4-inch headspace. Wipe rims; secure with lids and rings. Keep refrigerated. Makes 5 to 6 pints
