3 tomatoes, peeled and thinly sliced 2 c. buttermilk biscuit baking mix 2/3 c. milk salt and pepper to taste 2 t. fresh chives, chopped 2 t. fresh basil, chopped 1 c. mayonnaise 1 c. Cheddar cheese, grated
Let tomato slices rest on paper towels to absorb excess juice; set aside. Combine baking mix with milk to form dough; pat into a greased 9” pie plate. Layer tomato slices over dough; sprinkle with salt, pepper, chives and basil. Mix mayonnaise and cheese together in a separate mixing bowl; spread over the tomato slices. Bake at 375 degrees for 35 to 40 minutes or until cheese crust is golden. Makes 8 servings.
