2/3 c. shortening 1-1/4 c. sugar 1 t. vanilla extract 1 egg 2 c. all-purpose flour 2 t. baking powder 1/2 t. salt 3/4 c. crushed pineapple, drained 1/2 c. flaked coconut 1/2 c. chopped pecans
Cream shortening, sugar and vanilla together; blend in egg. Mix in flour, baking powder, salt and pineapple; gently stir in coconut and pecans. Drop by teaspoonfuls onto ungreased baking sheets; bake at 350 degrees until golden, about 10 to 12 minutes. Makes about 3 dozen.
