1 c. plus 2 T. very warm water, 110 to 115 degrees 2 T. active dry yeast 1/3 c. olive oil 1/4 c. sugar 3-1/2 c. bread flour or all-purpose flour, divided 1/2 t. salt 1 egg, beaten Garnish: melted butter
In the bowl of an electric mixer, combine warm water, yeast, oil and sugar. Let stand for 10 minutes to allow yeast to bloom; mixture will look puffy. Add 2 cups flour, salt and egg. Beat with mixer on medium speed, using a dough hook; gradually beat in remaining flour. Allow mixer to do the work, kneading it all together until dough becomes a soft, smooth ball. Shape dough into 12 balls; place in a greased 13"x9" baking pan. Let stand for 10 minutes. Bake at 400 degrees for 10 minutes, or just until tops are golden. Remove from oven; brush tops with melted butter. Makes one dozen.
