4 c. peaches, pitted and sliced 1 T. lemon juice 1 t. fresh ginger, peeled and grated 1 c. rolled oats, uncooked 1/4 c. all-purpose flour 1/4 c. brown sugar, packed 1 T. cinnamon 1/8 t. nutmeg 1/8 t. salt 1/4 c. butter, melted
Arrange peach slices in a greased 10" cast-iron skillet or baking pan. Sprinkle with lemon juice and ginger; set aside. In a bowl, combine remaining ingredients except melted butter. Mix well and stir in butter. Spoon batter over peaches. Bake at 375 degrees for 20 minutes, or until bubbly and golden. Serves 4.
