2 c. yellow squash, chopped 1 onion, chopped 1 egg, beaten 1/2 c. all-purpose flour 1 t. salt 1 t. pepper 2 to 3 T. bacon drippings or oil for frying
In a bowl, combine all ingredients except drippings or oil; mix well. Heat drippings or oil in a skillet over medium-high heat. Drop squash mixture into skillet by large spoonfuls. Cook on each side for 4 minutes, or until golden. Drain on paper towels. Makes 4 to 6 servings.
