1/2 c. butter 1 c. light brown sugar, packed 2 9-inch pie crusts 4 to 6 cooking apples, peeled cored and sliced 1 c. sugar 2 t. cinnamon Garnish: vanilla ice cream
Place butter in a cast-iron skillet: place skillet in a 350-degree oven until butter melts. Stir brown sugar into melted butter. Return skillet to oven for 3 to 4 minutes. Place one pie crust over butter mixture in skillet: set aside. Arrange apple slices to fill crust. Mix together sugar and cinnamon; sprinkle over apples. Place second pie crust on top; crimp edges to seal. Make 4 to 6 small slits in crust with a knife tip. Transfer skillet to oven. Bake, uncovered, at 350 degrees for 45 minutes, or until bubbly and crust is lightly golden. Serve warm, topped with ice cream. Makes 6 to 8 servings.
