3 c. long-cooking oats, uncooked 2-1/2 c. all-purpose flour 1 t. baking powder 1/4 t. salt 2 c. brown sugar, packed and divided 1/2 c. margarine, melted 1/2 c. butter, melted 1/2 c. milk 16-oz. pkg. chopped dates 1 c. hot water
Mix together oats, flour, baking powder, salt, one cup brown sugar, margarine, butter and milk. Divide dough into 4 portions. On a floured surface, roll out one portion at a time to about 1/8-inch thick. Cut out shapes with a glass or round cookie cutter. Transfer to greased baking sheets. Bake at 325 degrees for 10 to 15 minutes. Remove to cool completely. To make filling, combine dates, remaining brown sugar and hot water over medium heat. Cook for 3 to 5 minutes, until thickened. Cool completely. Spread onto half of cookies; place another one on top. Makes 2 dozen large cookies or 3-1/2 dozen small cookies.
