2 c. biscuit baking mix 1-1/3 c. milk 2 T. sugar 1 t. vanilla extract 1 egg 1/2 c. graham crackers, crumbled, divided 14 T. marshmallow creme, divided 14 T. chocolate chips, divided Garnish: graham crackers, crumbled and chocolate chips
Stir together biscuit baking mix, milk, sugar, vanilla and egg; pour a little less than 1/4 cup onto a hot, oiled griddle. Cook until bubbles begin to form around the edges of the pancakes. Sprinkle about one tablespoon graham cracker crumbs over each pancake and turn them over. Cook until golden and remove from griddle; spread one tablespoon marshmallow creme over the crumb side of each pancake, then sprinkle one tablespoon chocolate chips over marshmallow creme. Top with an additional pancake and spread an additional tablespoon of marshmallow creme over. Garnish with graham cracker crumbs and chocolate chips over top. Makes 6 to 8 servings.
