1 lb. uncooked medium shrimp, peeled and cleaned 1-1/2 c. instant rice, uncooked 1/2 c. carrot, peeled and shredded 1/4 c. green onions, sliced 3/4 c. hot water 1/3 c. teriyaki marinade 2 t. sesame oil 1/2 t. garlic powder Optional: 2 T. sliced almonds
In a large bowl, combine all ingredients except almonds; toss to mix well. Spoon 1/4 of shrimp mixture into the center of an 18-inch length of nonstick aluminum foil. Bring up sides of foil. Double-fold the top and ends to seal packet, leaving room for heat circulation inside. Repeat to make 3 more packets. Place packets on a large baking sheet; bake at 450 degrees for 15 to 18 minutes. Open packets carefully; sprinkle with almonds, if desired. Makes 4 servings.
