8-1/2 oz. pkg. corn muffin mix 1/3 c. milk 1 egg, beaten 2 T. butter 2 T. all-purpose flour 1/4 t. salt 1-1/2 c. milk 3/4 c. shredded Cheddar cheese 1-1/2 c. cooked ham, cubed
Combine muffin mix, milk and egg; mix well and pour into a greased 8"x8" baking pan. Bake at 400 degrees for 18 to 20 minutes. In a saucepan, melt butter over low heat. Stir in flour and salt. Slowly add milk, whisking until smooth. Bring to a boil; boil and stir for 2 minutes. Stir in cheese and ham; heat through. Cut cornbread into squares; top with creamed ham. Serves 4.
