6 medium sweet potatoes, cooked and peeled 1/2 c. miniature marshmallows 3/4 c. brown sugar 1 t. salt 1/4 c. butter
Slice potatoes into 1/2" slices. Layer potatoes in a buttered 1-1/2 quart casserole dish with mixture of sugar, salt and butter on top. Continue until ending with sugar and butter. Bake uncovered at 375 degrees for about 30 minutes or until glazed. Add marshmallows in the last 5 minutes; brown lightly. Serves 6.
