14-3/4 oz. can salmon, drained and 2 T. liquid reserved
1 egg, beaten
1/3 c. onion, minced
1/4 c. all-purpose flour
2 t. baking powder
2 T. canola oil
salt and pepper to taste
Combine salmon, egg, onion and flour in a medium bowl; set aside. In a small bowl, mix together reserved salmon liquid and baking powder; stir into salmon mixture. Form into 4 patties. Heat oil in a large skillet over medium heat; add patties. Cook until golden on both sides. Sprinkle with salt and pepper. Makes 4 servings.
