1 lb. ground beef 4 c. beef broth 24-oz. jar salsa 10-oz. can black beans 3/4 c.dried lentils 1 t. ground cumin salt and pepper to taste tortilla chips Garnish: shredded Cheddar cheese, sour cream, chopped fresh cilantro
Brown beef in a stockpot over medium heat; drain. Add remaining ingredients except tortilla chips and garnish. Bring to a boil. Reduce heat to medium-low. Cover and simmer for 30 to 40 minutes, stirring occasionally, until lentils are soft. Serve with tortilla chips; garnish as desired. Makes 8 servings.
