2 c. potatoes, peeled and diced 1 onion, diced 3 c. water 1 t. salt 1 t. pepper 1/4 c. celery, chopped 2 T. butter 3 eggs, hard-boiled, peeled and chopped 4 c. milk 1 T. fresh parsley, chopped
In a large pot over medium-high heat, combine potatoes, onion, water, salt and pepper. Bring to a boil; boil for 8 to 10 minutes. Add celery and cook an additional 5 to 10 minutes, until potatoes are soft. Stir in remaining ingredients and heat through. Serves 4 to 6.
