1 T. instant coffee granules 1/2 c. milk 3 c. biscuit baking mix 3/4 c. brown sugar, packed 1/4 c. all-purpose flour 1 egg, beaten 1 c. ripe banana, mashed 1 c. pitted dates, snipped 1/2 c. chopped walnuts 1/2 c. semi-sweet chocolate chips
In a bowl, dissolve coffee granules in milk; set aside. In a large bowl, stir together biscuit mix, brown sugar and flour; set aside. Add egg and banana to coffee mixture; mix well. Add egg mixture to biscuit mixture, stirring just until moistened. Fold in dates, walnuts and chocolate chips. Grease the bottom only of two, 16-ounce metal cans, or one 9"x5" loaf pan. Pour in batter. Bake at 350 degrees for 50 to 60 minutes. Cool in cans or pan for 10 minutes. Turn out bread; cool thoroughly. Makes one regular or 2 small loaves.
