1 lb. lean ground beef 1/2 lb. ground Italian pork sausage 2 c. Italian-flavored dry bread crumbs 1/2 c. grated Parmesan cheese 3 eggs, beaten 4 cloves garlic, minced 1/4 c. fresh Italian parsley, chopped 1 T. fresh basil, minced 1/4 t. red pepper flakes 1/2 t. salt 1/2 t. pepper 1/4 c. olive oil 24 oz. jar marinara sauce crusty sub rolls, split Garnish: shredded mozzarella cheese
In a large bowl, combine beef, sausage, bread crumbs, cheese, eggs, garlic, herbs and seasonings. Mix until well combined, form into 2-inch balls. Heat oil in a large dskillet over medium heat. Cook meatballs in oil until browned on all sides, about 15 minutes; do not cook through. remove meatballs to paper towels to drain. Pour pasta sauce into a large saucepan over low heat; spoon in meatballs. Simmer for 40 to 50 minutes, until meatballs are cooked through. To serve, spoon meatballs with some sauce into sub rolls; sprinkle with mozzarella cheese. Serves 6 to 8.
