6 c. water 1 t. salt 1/2 c. yellow cornmeal 3 T. butter 3 c. cooked turkey, diced 1 lb. sliced mushrooms 2 to 2-1/2 c. meatless pasta sauce 3/4 c. grated Parmesan cheese pepper to taste
Combine water and salt in a large saucepan over high heat; bring to a boil. Gradually add cornmeal, stirring constantly with a wooden spoon. Cook over medium-low heat for about 30 minutes, to the consistency of mashed potatoes. Meanwhile, in a skillet over medium heat, sauté mushrooms in butter. Transfer cornmeal mixture to a buttered 10"x10" baking pan; level off with spoon. Spoon turkey and mushrooms over top; spread pasta sauce over all. Sprinkle with cheese and a little pepper. Bake, uncovered, at 350 degrees for 45 minutes, or until heated through. Serves 6 to 8.
