1/2 c. sugar 5 T. butter, softened 1 t. vanilla extract 1/2 t. maple flavoring 2 eggs 1-1/4 c. all-purpose flour 1-1/4 t. baking powder 1/4 t. salt 1/4 c. milk 1/4 c. maple syrup
Blend sugar, butter, vanilla and maple flavoring on medium speed until well-blended. Add eggs, one at a time, blending well after each addition; set aside. Sift flour, baking powder and salt together in a mixing bowl; set aside. Combine milk and syrup together in a separate mixing bowl. Add flour and syrup mixture alternately into sugar mixture, beginning and ending with flour; mix well after each addition. Spoon batter into 12 muffin cups lined with paper liners; bake at 350 degrees for 20 minutes or until done. Cool in pan for 10 minutes; remove and cool completely on wire racks. Frost. Makes 12 cupcakes.
Frosting:
3 T. maple syrup
2 T. butter, softened
1/2 t. vanilla extract
1/2 t. maple flavoring
1/8 t. salt
1-3/4 c. powdered sugar
Blend first 5 ingredients together on medium speed of a mixer for one minute; gradually blend in powdered sugar until smooth and creamy.
