2 16-1/2 oz. tubes refrigerated sugar cookie dough, softened 1 c. dried cherries, chopped 1 c. pistachios, chopped 2 11-oz. pkgs. white chocolate chips
Combine cookie dough, cherries and pistachios in a large bowl; mix well. Shape into 2 logs; chill for one hour. Slice cookies 1/4-inch thick; arrange on lightly greased baking sheets. Bake at 350 degrees for 12 to 14 minutes, until golden. Cool completely. Melt chocolate in a double boiler over medium-low heat; stir until smooth. Dip cookies in melted chocolate and place on wax paper; let stand until set. Makes about 5 dozen.
