Chocolate-Covered Raisin Fudge

1-1/2 c. sugar
2/3 c. evaporated milk
2 T. butter
1/4 t. salt
2 c. mini marshmallows
1-1/2 c. semi-sweet chocolate chips
2 c. chocolate-covered raisins, divided
1 t. vanilla extract
1/2 c. chopped nuts


Combine sugar, evaporated milk, butter and salt in a heavy saucepan; bring to a rolling boil over medium heat, stirring constantly. Boil for 4 to 5 minutes; remove from heat. Stir in marshmallows, chocolate chips, one cup raisins, vanilla and nuts. Stir continuously for one minute until marshmallows are melted. Pour into an 8"x8" baking pan lined with aluminum foil; cool for one minute. Sprinkle remaining raisins on top, pressing in slightly. Chill for 2 hours until firm. Lift from pan and remove foil. Cut into squares. Makes 1-1/2 dozen
