16-oz. can black beans, drained and rinsed 11-oz. can corn, drained 4-oz. can diced green chiles 1 c. cooked brown rice 1/2 c. cornmeal 1 t. onion powder 1/4 t. garlic powder salt to taste 2 T. oil 2 large ciabatta rolls, split and toasted Optional: fresh salsa
Mash beans in a large bowl; add corn, chiles, rice, cornmeal, onion powder and garlic powder. Chill well. Form mixture into 4 patties; season with salt. Heat oil in a skillet over medium heat; add patties and cook until golden on both sides. Serve open-faced on rolls, topped with salsa, if desired. Serves 4. | |
