Microwave Peanut Brittle

1-1/2 c. raw peanuts
1/2 c. corn syrup
1 c. sugar
1/8 t. salt
1 t. butter
1 t. vanilla extract
1 t. baking soda


Combine peanuts, corn syrup, sugar and salt in a microwave-safe 4-cup glass measuring cup. Microwave uncovered on high setting for 6 to 8 minutes, stirring halfway through cooking time; stir well at end of cooking time. Add butter and vanilla; mix well and heat an additional 1-1/2 minutes. Stir in baking soda. Pour onto greased baking sheet, cool and break into pieces. Makes about one pound.
