1 pt. cherry tomatoes, halved
1/2 c. green olives with pimentos, sliced
1/4 c. Kalamata olives, sliced
3 T. capers, drained
1 T. dried parsley
salt and pepper to taste
1/2 to 3/4 c. Italian dressing
Garnish: additional dried parsley
In a salad bowl, combine vegetables, parsley, salt and pepper; toss to mix. Add dressing to desired consistency. Cover and chill at least 2 hours. At serving time, garnish with parsley; use a slotted spoon to serve. Makes 4 servings.
