2 c. all-purpose flour 3⁄4 c. sugar 1 1⁄2 t. baking powder 1 1⁄2 t. baking soda 1⁄4 t. salt 1⁄2 t. cinnamon 1⁄2 c. carrot, peeled and shredded 1⁄3 c. light sour cream 1⁄4 c. unsweetened applesauce 1⁄4 c. water 2 eggs, lightly beaten 1 c. frozen cranberries
Grease the bottom of a 9"x5" loaf pan; set aside. In a large bowl, mix together flour, sugar, baking powder, baking soda, salt and cinnamon. Stir in carrot to coat. Make a well in center of flour mixture; add sour cream, applesauce, water and eggs. Stir until combined. Slowly stir in
cranberries. Spoon batter into pan. Bake on center oven rack at 350 degrees for 60 minutes, or until a toothpick inserted in the center comes out clean. Cool loaf in pan for 15 minutes. Remove to a rack and cool completely. Makes one loaf, serves 8.
