8 to 9-lb. smoked fully cooked shank ham
whole cloves
1-1⁄4 c. brown sugar, packed
1⁄2 c. maple syrup
Slice skin from ham. Score top of ham in a diamond pattern, making cuts 1⁄8-inch deep. Stud with whole cloves. Place ham, fat-side up, on a rack in a shallow roasting pan. Insert a meat thermometer into center of ham, making sure it does not touch bone or fat. Bake at 325 degrees for 2 to 2-1⁄2 hours or until meat thermometer registers 135 degrees. Combine brown sugar and maple syrup in a small bowl; stir well. Brush brown sugar mixture over ham. Bake 20 to 30 more minutes or until thermometer registers 140 degrees. Remove from oven and let stand 10 minutes before carving. Serves 16.
