1 T. garlic, minced
1 T. olive oil
1/4 c. water-packed sun-dried tomatoes, drained and chopped
1/4 c. water
8-oz. package cream cheese, room temperature
snack crackers
In a small skillet on medium-low heat, sauté garlic in oil until softened. Add tomatoes and stir to coat; add water and simmer until tomatoes are plumped. Drain if necessary. In a bowl, mash tomato mixture into cream cheese. Serve on crackers. Makes one cup.
